A Spicy Mix

I ended up walking 3 miles around the neighborhood this afternoon.  I lost track of time and thirty minutes before my family had their Easter dinner, I realized I didn’t have anything to eat!  So, I whipped up this quick meal in under thirty minutes!

Lentils with Chili Peppers, cumin, curry powder, garlic, and tomato paste.

Roasted Asparagus that I made for the family’s easter dinner.

Tempeh and Chipotle Hummus.

Everything together with a whole wheat pita pocket on the side!

Chocolate Chip Cookies

I wasn’t hungry when I woke up this morning.  So, rather than force myself to eat I decided to do something I enjoy: bake!  I used Veganomicon’s Wheat Free Chocolate Chip cookie recipe.  It was so relaxing and fun to bake- The last time I baked was during Christmas (time flies!)

Cookie Dough!  I can’t lie, I definitely licked the spoon when I was done!

A close up for you guys!  They were crumbly due to the oat flour but they are delicious.  I actually made the oat flour myself by putting oats in a food processor!

I haven’t had cookies with real sugar for quite some time but now that I have given up Splenda and all artificial sweeteners I can actually enjoy a real dessert.  I baked these without knowing the calories but of course I had to find out when I was done.  I was shocked!  They aren’t that bad for you!  Who knows how many i’ll eat today 😛

Quick and Easy Dinner

Since I have to get ready for my Easter Party, I kept dinner very easy and light.  After I made it, I realized it wouldn’t look to appealing on the blog!

Boca burger with 50 g avocado and spinach on a slice of Ezekiel 4:9 bread.

On the side I had some brussel sprouts.  282 calories, 22 grams of protein, and 14 grams of fiber.

Banana Flax Oatmeal

Do you see all the bananas in the background?  We bought ALL of those for just one dollar at the store!  It was a great deal and since my house actually eats bananas, they won’t go to waste!  I have a really good day planned today.  I’m going running with my brother at the trail this afternoon.  Later tonight i’m going to an Easter Party.  The party should be a blast!  I’m also going to be planning our Easter Menu.  I’m making a vegan dessert!
