Rockin Breakfast Panini

Here is my official entry for The Great Peanut Butter Exhibition.

Grilled Peanut Butter and Banana Panini.


  • 1 tbs Smart Balance Light Butter Spread
  • 2 Slices Ezekiel 4:9 Bread
  • 2 tbs Natural Peanut Butter
  • Banana
  • Cooking Spray (Pam)

Action shot!


  1. Heat grill pan on high to medium heat and spray with Pam.
  2. Slice banana and place on grill pan. Grill for 1 minute on each side.
  3. Remove banana from grill pan.
  4. Spray with Pam again and place both slices of bread on the pan. Before placing on the pan, make sure you brush the bread with melted Smart Balance.
  5. While bread is grilling, spread 2 tbs of peanut butter on one slice. Place your grilled banana slices on top of the peanut butter.
  6. Allow the bread to crisp up and get nice and brown with grill marks.
  7. Remove from heat, place bread on top of one another, slice in half and enjoy!

“Somebody worked out this morning!”

Thats what a man at the gym said to me when I was leaving!!

Since I didn’t exercise yesterday, I decided to do something different and work out in the morning!  I went to gym bright and early and did the 5:45 cycle class! 

  • 60 minute Power Cycle Class.

Boy was that hard!!   I wore a grey t-shirt (my mistake) and it was soaked by the end of class!  I haven’t had a workout this good in a long, long time!! 

As much as I love oatmeal for breakfast, I am in the mood for a little change… so, I made some pumpkin oatmeal pancakes!  I ate two before class and I’m actually eating the last one as I type this up!

1/2 cup pumpkin, oats, 1/4 cup light silk, stevia, baking powder, and cinnamon!

The pancakes were really great and I hope they keep me full as long as oatmeal does.  The three pancakes came to be 238 calories, 10 grams of protein, and 11 grams of fiber.  I love adding pumpkin to oats because it really has a lot of fiber in it!

Taking a cycle class this morning was fun and challenging… I can tell today is going to be great 🙂

Banana-Mango Oats!

This morning I decided to play with flavors and came up with a bowl of Banana AND Mango oatmeal!

Fluffy Bananas, Mango, Flax Seeds, a dash of cinnamon and splenda, and Almond Milk!

With coffee, breakfast was 293 calories, 8 grams of protein, and 8 grams of fiber!

I’m almost out of Spring Blend coffee… I need to buy a bag ASAP!  I’m also exhuasted.   I wonder why 😛

Oats, My Saving Grace

Wow, it’s been a battle to get up this morning!  I didn’t want to leave my warm, comforting bed.  I checked and it says it’s 32 out which doesn’t motivate me to get ready any faster!  It’s supposed to be in the upper 60’s today, I guess we’ll just have to wait and see!   Oh, someone is looking at our house this afternnoon so I might run at the trail.  Selling your house is a hassle!

At least breakfast was warm this morning…

Banana, Raisin, Milled Flax Seeds, and a dash of Cinnamon!

With Coffee, breakfast comes to 308 calories, 8 grams of protein, and 8 grams of fiber!

This bowl of oatmeal was my main motivation to get out of bed 😛

Pumpkin + Oatmeal = YUM!

Good Morning everyone!  Sorry for the cheesy title, I can’t think of anything else 🙂  It’s funny how I’m in a good mood in the mornings now…  I used to be the worst morning person.  I guess it’s pretty amazing what some early morning nutrition and coffee can do to a person!

Pumpkin, cinnamon, and milled flax seeds with 1 tbs of Sliced Almonds on top.

With coffee and soy creamer, this breakfast comes in at 291 calories, 10 grams of protein, and 12 grams of fiber!  Sorry for the bad quality, I swore I took a better photograph!

I’m so excited to work out today… isn’t that crazy?  I’m doing the whole walk to the gym and cycle routine!  I’m mainly excited because after my cycle class I am going to eat a Cashew Cookie LaraBar!  I planned my breakfast and lunch around that silly bar 😛

Just Another Morning

It’s Monday morning and I actually had no troubles getting up… that’s a first!  I was up late doing my project and now all I have left is an easy two page paper!  Anyways, I started the week with two of my favorite things: Banana Oatmeal and Coffee!

More banana than usual (I like eating more!), almond milk, milled flax seeds, cinnamon, and toasted sliced almonds on top.

With coffee, this was 320 calories, 9 grams of protein, and 9 grams of fiber.

I don’t think I could ever sick of oatmeal, it’s just so warm and comforting.  I was wondering, does anyone stop eating oatmeal when the summer arrives?  I know cereal would be cool and refreshing but I am infatuated with oatmeal right now and can’t imagine giving it up!

Banana Raisin Oatmeal

I’m not sure if I have mentioned this on the blog before, but my house is actually for sale.  We have people checking out the house a little after noon so I decided to eat a big breakfast despite sleeping in so I can go out running while they look at the house!  I am actually going to run at the trail with my father, we’re both training for a 10k in July!

I took a picture of my multivitamin this morning!  Breakfast comes out to be a total of 359 calories, 11 grams of protein, and 10 grams of fiber!
