Busy Baking

Whew, I just got done with baking my Vegan Staples!  It’s been awhile since I had to make them and I sort of forgot the work that goes into it!  I made Chickpea Cutlets and Black Bean Burgers from Veganomicon. 

chickpea cutlets.  I made them smaller this time around so I can put them into burgers and sandwiches. 

Black Bean Burgers.  I omitted the onions this time and added a squirt of lime juice to jazz things up.  They look really great, I can’t wait to try one!

After baking, I had Trader Joe’s lightly salted Apple Chips with some of my Pumpkin Hummus.

305 calories, 5 grams of protein, and 6 grams of fiber.

Aww man, It just started to pour down rain 😦

Late Night Blogging

Sorry tonight’s dinner post is SO late!  I got wrapped up in some things and lost track of time…  here is what I had to eat five hours ago!  Before I get to dinner, workout was a 45 minute cycle class.

Lemon Chickpea Lentil Soup from Eat, Drink, and Be Vegan.  I left it thicker than the recipe called just so it could be a little heartier.  I also changed some ingredients around and used green lentils instead of red so the color came out a little odd.  The flavors were dead on though.

Veganomicon Black Bean Burger on a TJ Whole Wheat Bun with Spinach, Ketchup, and Mustard.

With carrots on the side, dinner was 478 calories, 27 grams of protein, and 20 grams of fiber.

While I was working away, I munched on whole grain Tostitos and my mom’s black bean and corn salsa.  I mindlessly ate and didn’t measure my food so I’m estimated an extra 250-300 calories of snacking there…  Sorry this post took so long to get up!

A Sleepy Salad

I’m not sure if it was stress from my tests or my allergies, but after taking my tests this morning I felt really sick!  I called my mom and she signed me out of school.  I promptly passed out on the couch until 3 PM!  Since I pre-packed my lunch for school, I decided to eat that rather than make something new.  I feel pretty good now, maybe I just needed some sleep?

For lunch, I had a Salad with a Veganomicon Bean Burger and Sliced Fruit.

Sliced Apples and Strawberries.

Spinach, Carrots, Cucumber, Artichokes, Black Bean burger and Annie’s Goddess Dressing.  I also had a Wasa Cracker on the side.

This meal came out to be 370 calories, 18 grams of protein, and 15 grams of fiber.

Gosh, I’m still sleepy!

Oh, What a Sweet Potato!

Dinner tonight was fantastic!  I popped a Sweet Potato into the oven while I showered and then put the dish together a little bit later!  So easy to make and so yummy to eat 🙂

 Dinner was roughly 500 calories, 27 grams of protein, and 15 grams of fiber.

Beanball Trio

Lunch was really good today, I was excited to eat it!  I ate outside again since it is so beautiful out!  I am not sure what I am doing for my work out.   I’m supposed to run on Wednesdays but my left foot is bothering me for some reason so I might just do a cycle class instead.  I guess i’ll see how I feel in a few hours!

For lunch today, I had Spaghetti Squash with Veganomicon Beanballs.

Before lunch, I had a mid-morning snack of just a plain Vegan Boca Burger.  It may seem like an odd snack but that’s what I was craving and it was the perfect snack to hold me off for for lunch.

Spaghetti Squash, spinach, bell peppers, Earthfare Marinara, and three Beanballs.

Everything came in at 408 calories, 29 grams of protein, and 17 grams of fiber!

Confetti Couscous with Grilled Seitan

I wasn’t in the mood to cook anything time consuming this evening so I decided to assemble a simple dish.  I’ve noticed that I haven’t been wanting to cook at night lately, how strange!  I might change up tomorrow’s dinner plan and have a burger 😛

For Dinner tonight, I created Confetti Couscous with Grilled Seitan and Green beans.

Whole wheat couscous, raw red peppers, fresh mango, a little cilantro, and black beans.  I tossed in 1 tbs of Annie’s Goddess dressing.  The dressing gave this fresh dish a great kick and really enhanced all the flavors.

A side of Canned Green Beans.  After last night’s fresh green beans, these were not that good!  And call me crazy but I swear I could taste the high sodium content.

Grilled Seitan Cutlet.  I took one of my cutlets I made yesterday and grilled it on my grill pan!  I loved the flavor and believe it or not, it got even firmer and chewier.  So, so good!  Seitan is my new favorite and will become a Vegans Eat staple!

Dinner came in at 567 calories, 36 grams of protein, and 15 grams of fiber!

I hit my calorie goals for the third day in a row thanks to this big dinner!  I didn’t think it was that big when I was cooking… kind of funny how things work out!  Well, I have a Current Event to write, a Stats tests to study for, AND the Biggest Loser Season Finale!  I haven’t watched TV in over a week so I am excited to sit down and relax.

Seitan and Spaghetti

I finally decided to make some Seitan!  I don’t own any nutritional yeast so instead of making traditional seitan, I made the Seitan Cutlets from Veganomicon.  They were surprisingly easy to make and are absolutely delicious!  You will see the other two cutlets later on in the week!

For Dinner, I had Whole Wheat Spaghetti with an Assortment of Vegetables, and Seitan.

Seitan Cutlet.  It was so chewy and had a great flavor.  To me, it almost looks like real meat! 

On the side, I used some leftover 100% Whole Wheat Pizza Dough and baked a tiny ‘breadstick’.  To be honest, I was a little hesitant to take a picture of this because it looks so bad!  It turned out to be doughy on the top and crunchy on the bottom- perfecto!

536 calories, 35 grams of protein, and 15 grams of fiber!

The seitan cutlet had 20 grams of protein on it’s own!  I really enjoyed tonights dinner and will probably make it again in the future.  I hit my calorie goal without really trying so that’s good news!  Upping my work outs has definitely made eating more a lot easier!  Well, I’m off to study for Oceanography!
