Polly Wants Some Peanut Butter

For the past two nights, I have been craving two of my favorite things in the world.. Chocolate and Peanut Butter. 

These two bad boys called out to me, Trader Joe’s 100 Calorie Chocolate Graham Toucan and 1 tbs of Natural Peanut Butter.

Simple and delicious.  Eating this reminds me of when I was a little kid.  For a treat, we would have JIF peanut butter and sheets upon sheets of chocolate graham crackers.  Ah, to be young and naive about calories 😉

Busy Baking

Whew, I just got done with baking my Vegan Staples!  It’s been awhile since I had to make them and I sort of forgot the work that goes into it!  I made Chickpea Cutlets and Black Bean Burgers from Veganomicon. 

chickpea cutlets.  I made them smaller this time around so I can put them into burgers and sandwiches. 

Black Bean Burgers.  I omitted the onions this time and added a squirt of lime juice to jazz things up.  They look really great, I can’t wait to try one!

After baking, I had Trader Joe’s lightly salted Apple Chips with some of my Pumpkin Hummus.

305 calories, 5 grams of protein, and 6 grams of fiber.

Aww man, It just started to pour down rain 😦

Sleeping the Day Away

So I had thought I had enough sleep last night to pull off a cycle class but I was wrong!!  I crawled in bed a little bit before dinner just to rest my eyes and the next thing I know, it’s 12:30 AM!  I woke up to a growling stomach so I asked my mom if I should eat…

Spinach and Bell Peppers

Ezekiel bread, smart deli ham, mustard, .25 tbs Woodstock dressing, spinach, and avocado.

341 calories, 24 grams protein, and 12 grams of fiber.

Before I fell asleep, I had an afternoon snack of Pumpkin Hummus, Carrots, and Trader Joe’s High Fiber O’s.

309 calories, 9 grams of protein, and 13 grams of fiber.

I’ve really messed myself up!!

Sushi and Sweets!

This afternoon, I finally got to try Trader Joe’s ‘Just a Handful of Go Raw Trek Mix’.  They are pre-portioned snack bags of trail mix!

210 calories, 3 grams of fiber, and 7 grams of protein.  They were really tasty but slightly high in calories… it was good for a day where I am not feeling 100%!

After munching on these, I went for a very easy 2.25 mile walk.  It was nice out and I wanted to move on my ‘off’ day so it was perfect

DINNER

For dinner tonight, I went out and had Sushi!

Salad with Ginger Dressing.  I had a few bites of this, the dressing wasn’t good at all…

Steamed Edamame with Sea Salt.

Asparagus Roll!  Tempura Asparagus turned out to be fantastic!  I was surprised when this roll came out because I wasn’t expecting it to be crispy!

Vegetable Roll with asian baby carrots, marinated daikon, cucumber, and asparagus.

DESSERT!

For dessert tonight, We raided Earth Fare!  I had several samples of vegan candy from the bulk section and ended up making two sweet purchases.

Afternoon Recap

Wow, today kind of flew by!  I just got back from a cycle class and I’m starving (and soaking wet) so I’ll make this quick and recap everything!

For snack today, I made a Sun-Dried Tomato Hummus and served it with crisp veggies.

The hummus is made of sun dried tomatoes canned in oil (not too healthy), 1/4 cup silk yogurt, 1 tbs tahini, garlic, sea salt, and soaked garbanzo beans.  I served it with cucumbers, red peppers, and a carrot.

After snack, Kath asked me if I wanted to go on a walk so of course I had to go!  The weather is perfect and I got to show her the trail I run at!  It was really relaxing and fun 🙂  We ended up walking 2.5 miles together.

When I got home from walking, I looked at the clock and realized I could make it to the cycle class.  So, I grabbed my gym membership and headed out the door!  The class was tough but the teacher was a little too… enthusiastic.  Oh well, at least I got in a good sweat!

Cycle Day!

I just sat down!

Before leaving to work out, I had a tiny snack to give me some energy!   I had 1/3 cup Silk Yogurt, 1/2 tbs milled flax seeds, and some fresh cantaloupe.

91 calories, 3 grams of protein, and 2 grams of fiber.

 

My work out was fantastic!

  • 2 mile walk in 32:33
  • 45 minute cycle class
  • 2 mile walk in 32:02

On the walk home I got to eat my Cashew Cookie Larabar 🙂

210 calories, 6 grams of protein, and 3 grams of fiber.

I’m going to shower and make some dinner!

Running Fast and Eating Slow

Well, the weather worked out great and only sprinkled on me for a few minutes!  I was pretty cold but I warmed up once I got into the gym!  Here is what I did for today’s workout:

  • Run 2 miles in 18:36
  • 10 minutes of ab exercises
  • 15 minutes of free weights and machines
  • Run 2 miles in 18:53

It feels really great to be done with my work out this early in the day!  I might have to go straight after school from now on… it’s invigorating!  After running, I had a fantastic snack.

Banana with 1/2 tbs Smucker’s Natural Chunky PB and 1/2 Tbs Cinnamon Raisin Swirl PB.   

136 calories, 4 grams of protein, and 2 grams of fiber.

I love PB + Banana for snack because it seriously takes me forever to eat it!  I like to savor every single bite.
