Heart Healthy Pumpkin & Raisin Cookies

Hello blog world! The past couple of weeks have been beyond hectic! I had my last ‘real’ day of school on Monday and took an exam today. I have one more exam tomorrow and then I am free for the summer! I worked out early this morning and figured I would use my spare time to do a little vegan baking! This is a recipe I created because I was in the mood for something sweet but not heavy.

Pumpkin & Raisin Cookies


  • 1/3 cup Heart Smart Bisquick
  • 1/2 cup Oats
  • 1/2 cup canned pumpkin
  • Cinnamon and Stevia to taste
  • 1/8 cup Light Soy Milk
  • Mini box of raisins


  1. Preheat oven to 375 degrees
  2. In a large bowl, mix all of your ingredients
  3. Spray a pan with PAM and scoop about 1 tbs of the pumpkin mixture onto pan.
  4. Press cookies flat with a fork.
  5. Bake in the oven for 12 minutes or until done

Yields 11 cookies at about 35 calories a piece.

I am not sure of the exact calories, I just estimated that number in my head! They are perfectly chewy and dense. I really think the raisins make the cookie. I had two and my mom had two cookies as well! I put the rest in the freezer for later lunches this summer!

Early Morning Splurging

This morning’s breakfast wasn’t a splurge but it sure tasted like one!!  Oh, and I have recovered from that weird nap last night 🙂

Pumpkin-Banana Oats with Chocolate Chips.

Pumpkin, banana, chocolate chips, cinnamon, and flax

319 calories, 10 grams of protein, and 13 grams of fiber!!

“Somebody worked out this morning!”

Thats what a man at the gym said to me when I was leaving!!

Since I didn’t exercise yesterday, I decided to do something different and work out in the morning!  I went to gym bright and early and did the 5:45 cycle class! 

  • 60 minute Power Cycle Class.

Boy was that hard!!   I wore a grey t-shirt (my mistake) and it was soaked by the end of class!  I haven’t had a workout this good in a long, long time!! 

As much as I love oatmeal for breakfast, I am in the mood for a little change… so, I made some pumpkin oatmeal pancakes!  I ate two before class and I’m actually eating the last one as I type this up!

1/2 cup pumpkin, oats, 1/4 cup light silk, stevia, baking powder, and cinnamon!

The pancakes were really great and I hope they keep me full as long as oatmeal does.  The three pancakes came to be 238 calories, 10 grams of protein, and 11 grams of fiber.  I love adding pumpkin to oats because it really has a lot of fiber in it!

Taking a cycle class this morning was fun and challenging… I can tell today is going to be great 🙂

Pumpkin AND Banana Oatmeal!

I love both banana and pumpkin oatmeal so I figured… why not combine the two? 

Banana, Pumpkin, Cinnamon, and Flax!  It’s the perfect mix of ingredients.  You have the creaminess from the banana and almond milk as well as the great taste of pumpkin!  It was sort of like a whipped pumpkin oatmeal.

Breakfast was 281 calories, 9 grams of protein, and 10 grams of fiber!  It would have been awesome with some sliced almonds but i’m all out! 

Mmmm, such a great way to start the morning.  Just out of curiosity, what is your favorite oatmeal flavor combo?

Pumpkin + Oatmeal = YUM!

Good Morning everyone!  Sorry for the cheesy title, I can’t think of anything else 🙂  It’s funny how I’m in a good mood in the mornings now…  I used to be the worst morning person.  I guess it’s pretty amazing what some early morning nutrition and coffee can do to a person!

Pumpkin, cinnamon, and milled flax seeds with 1 tbs of Sliced Almonds on top.

With coffee and soy creamer, this breakfast comes in at 291 calories, 10 grams of protein, and 12 grams of fiber!  Sorry for the bad quality, I swore I took a better photograph!

I’m so excited to work out today… isn’t that crazy?  I’m doing the whole walk to the gym and cycle routine!  I’m mainly excited because after my cycle class I am going to eat a Cashew Cookie LaraBar!  I planned my breakfast and lunch around that silly bar 😛

100th Post Celebration and Pumpkin Hummus

I just finished my workout and am in desperate need of a shower so I’ll make this fast!  For my workout, I ran 3 miles in 25:54, lifted weights, and did ab work.  I forgot that nice weather= more sweating!

If the title didn’t give it away, this is my 100th post!  100 came so fast and my one month ‘Bloggiversary’ is coming up in a couple days 🙂

Before working out, I made Pumpkin Hummus, it’s amazing!

  • 1 can Chickpeas
  • 1 tbs Tahini
  • 1/2 cup Soy Yogurt
  • 1/2 cup Pumpkin
  • Lemon, salt, cinnamon, and nutmeg

I ate my hummus with thinly sliced apples.

As well as carrot sticks.

This sweet snack was 203 calories, 7 grams of protein, and 9 grams of fiber.

Late Night Run and Warm Pumpkin

I ended up running around the neighborhood tonight, the temperature was perfect and it was quite relaxing.  I ran 3 miles in 26:56.  In addition to that, I wore a pedometer today and got a little over 5,000 steps.  It’s no where near my 12,000 step days in NYC but it wasn’t bad!  I ran some errands today so I guess that helped.

After running, I made a tiny snack.

Pumpkin with homemade soy yogurt and almonds- warmed up a tiny bit and finished with cinnamon.

123 calories, 7 grams of protein, and 6 grams of fiber!

I still have a lot of homework and studying to do, Good night everyone!
