Rockin Breakfast Panini

Here is my official entry for The Great Peanut Butter Exhibition.

Grilled Peanut Butter and Banana Panini.


  • 1 tbs Smart Balance Light Butter Spread
  • 2 Slices Ezekiel 4:9 Bread
  • 2 tbs Natural Peanut Butter
  • Banana
  • Cooking Spray (Pam)

Action shot!


  1. Heat grill pan on high to medium heat and spray with Pam.
  2. Slice banana and place on grill pan. Grill for 1 minute on each side.
  3. Remove banana from grill pan.
  4. Spray with Pam again and place both slices of bread on the pan. Before placing on the pan, make sure you brush the bread with melted Smart Balance.
  5. While bread is grilling, spread 2 tbs of peanut butter on one slice. Place your grilled banana slices on top of the peanut butter.
  6. Allow the bread to crisp up and get nice and brown with grill marks.
  7. Remove from heat, place bread on top of one another, slice in half and enjoy!

Polly Wants Some Peanut Butter

For the past two nights, I have been craving two of my favorite things in the world.. Chocolate and Peanut Butter. 

These two bad boys called out to me, Trader Joe’s 100 Calorie Chocolate Graham Toucan and 1 tbs of Natural Peanut Butter.

Simple and delicious.  Eating this reminds me of when I was a little kid.  For a treat, we would have JIF peanut butter and sheets upon sheets of chocolate graham crackers.  Ah, to be young and naive about calories 😉

Running Fast and Eating Slow

Well, the weather worked out great and only sprinkled on me for a few minutes!  I was pretty cold but I warmed up once I got into the gym!  Here is what I did for today’s workout:

  • Run 2 miles in 18:36
  • 10 minutes of ab exercises
  • 15 minutes of free weights and machines
  • Run 2 miles in 18:53

It feels really great to be done with my work out this early in the day!  I might have to go straight after school from now on… it’s invigorating!  After running, I had a fantastic snack.

Banana with 1/2 tbs Smucker’s Natural Chunky PB and 1/2 Tbs Cinnamon Raisin Swirl PB.   

136 calories, 4 grams of protein, and 2 grams of fiber.

I love PB + Banana for snack because it seriously takes me forever to eat it!  I like to savor every single bite.

Peanut Butter and Banana Oatmeal

Is it Sunday already?

I really do not enjoy Sundays.  For me, I spend the day doing all the homework I should have been doing throughout the weekend.  I have to read some Canterbury tales, study for a test, and do a Current Event project which thankfully due on Tuesday!  I’m still going to fit in some fun (attempting Seitan today) and I’m going to walk to the gym, take a cycle class, and walk back.  I also need to plan out next weeks menu and make it out to the store.  Ok, time for breakfast!  Since I have peanut butter in the house, I decided to use a tiny bit of it!

Banana, flax, cinnamon, and 1/2 tbs of Smucker’s natural chunky peanut butter.

I cooked the oats longer than usual so it’s like a thick bowl of banana bread with peanut butter on top mmm!

300 calories, 10 grams of protein, and 8 grams of fiber.

Chocolate Cupcakes with Peanut Buttercream Frosting!

To celebrate the blog’s one month anniversary, I made Chocolate Cupcakes with Peanut Buttercream Frosting from Vegan Cupcakes Take Over The World.  I took a lot of pictures and can you believe this is my first Vegan Cupcake-ever!

The chocolate and peanut butter combo was fantastic! The entire family enjoyed these, even my skeptical younger brother (he sniffed it a few times before deeming it worthy).

Sorry for the flood of photos, I’m sort of excited!  I’m blogging upstairs so I’m not tempted to eat another cupcake!  I didn’t do the calories for this dessert, I’m just enjoying it 🙂

Pizza with a Sweet Ending

Today was so nice and warm but it looked like it was going to rain this afternoon!  Thank goodness the rain stayed away because I ran 3 miles around the neighborhood in 26:27.  The run was really great and it was nice to see all the flowers that have bloomed!  I have some great news though….

It’s PIZZA night!!

I started pizza night off with spinach, roasted squash, and roasted eggplant leftover from pizza toppings.

For my pizza, I used Trader Joe’s pre-made 100% whole wheat pizza dough.  This dough was amazing and baked up so well and for only 99 cents, it’s the deal of the century.  I think i’ll use the left over dough this weekend!

I topped the pizza with FYH Vegan Gourmet Cheese, Roasted Squash, Roasted Eggplant, Earth Fare Marinara, and Mushrooms.

Dinner was fantastic and I definitely ate it all!  I also had some grapes and baby dill pickles while cooking- weird craving!  All together, this doughy feast came out to 472 calories, 14 grams of protein, and 16 grams of fiber.

After Dinner, I was craving something sweet but I wanted to keep things healthy and light!

Banana with Cinnamon Raisin Swirl Peanut Butter from PB & Co.

It was amazing! I’ve never had this type of PB before and this tiny sweet treat took me about 30 minutes to eat- I savored it!  It was only 126 calories, 4 grams of protein, and 2 grams of fiber!
