Rain, Rain, PLEASE go away!

It is so Dreary and Rainy today!  It’s honestly miserable out… and I haven’t had a good day at all so it doesn’t help.  After posting this i’m going to crawl into bed and study.  I’ll save exercise for later tonight.  

I had a light lunch today, I wasn’t really in the mood for anything heavy so I stuck to a salad and fruit.  Simple but really refreshing.

Cantaloupe, Blueberries, and Strawberries.

Salad with fresh spinach, baby carrots, Trader Joe’s Chicken-less Strips and a ‘dressing’ made of lemon juice, pepper, and homemade soy yogurt. 

Lunch was 240 calories, 24 grams of protein, and 7 grams of fiber.

Since it’s so dreary out, I really wanted something warm and comforting for my after school snack.  I figured the best thing would be a baked pancake.

Baked in the oven, I ate this straight out of the pan!  It was made out of Aunt Jemima’s Whole Wheat Pancake Blend and some frozen berries.  It really hit spot and helped balance out my light lunch by adding 293 calories, 9 grams of protein, and 10 grams of fiber.

    All I did was take .5 cup of Pancake Mix and put about 3/4 cup water and mixed in a bowl- I eyeballed the water and added it to the batter until it was thin and made the batter look ‘runny’

    Then, I sprayed a pan and poured the batter in. It should be a really thin layer but it puffs up as it bakes so thats ok. I took a couple of frozen berries and plopped them into the pan.

    I baked at 375 degrees until done. This took maybe 10-12 minutes, I just went by looks.

    Really simple and a lot cleaner than making pancakes on the stove!

    BRILLIANT!! I will have to try this soon!! Did you mix call for water? Mine calls for eggs and milk so I’m not sure if water would be good with it. Or did you just veto the eggs and milk vegan-style? Also, is that an 8″ round pan?

    My mix called for milk and eggs but milk is the only thing it really needs. I was out of soy milk so I used water and it came out just about the same although I would recommend using milk. And yes, that is an 8″ pan.

    The funny thing is that i’ve been this since I was 15 and never thought twice about it!
