Bunches of Beans

Sorry my dinner post is so late, I’ve had some work to do and I had a late exercise.  For my workout, I hopped on the elliptical for 45 minutes.

For dinner, I had Cannellini beans, bell peppers, spinach, and garlic.

I also had four Veganomicon Beanballs with some marinara sauce on top.

Dinner was really great, I love beanballs!  All together, dinner comes out to be 408 calories, 22 grams of protein, and 18 grams of fiber.

    I like your blog, the food always looks great. Just wondering, do you find the amount of calories you eat gets you through the day and a long workout? Just curious how you find balance?

    Liz, I actually find that this blog has helped me enough compared to before. As a busy student, I often just skipped breakfast and ended up grazing all day long. So, right now I am actually satisfied and my body is loving me for it!

    Alice, I measure fruit and veggies in grams but do things like oatmeal, nuts, and beans with cup measurements. I then log into Sparkpeople.com and count calories there.
