Mexican Plate

I wasn’t in the mood to make anything ‘special’ for dinner so I just whipped up a quick and easy Mexican inspired plate.

Brown rice cooked with a cup of sliced bell peppers.

Fresh Guacamole

Fat Free Refried Beans with Vegan cheese that I didn’t really care for.

454 calories, 17 grams of protein, and 14 grams of fiber.

    Hi! I recently switched to a somewhat vegan diet. I have taken out meat, dairy, and egg products but am still holding onto seafood. I am glad to see that I will have someone to follow in this adventure. Is that the Rice cheese? I think I have the same one and am not too fond of it unless it is melted a bit. Anyway, keep up the good work…i’ll be sure to add this to my list of blogs.

    I would recommend Vegan Gourmet cheese, it actually melts and tastes really good. This was actually Vegan Galaxy

    It doesn’t melt well but it tastes pretty good. It’s hard to find vegan cheese seeing that most soy cheese has casein, a milk protein, in it.
