Curried Lentils with Tempeh

I had a pretty good run today, 4 miles in 36:05.  It was pretty warm so I did struggle a bit at the end.  After running, I had a huge appetite so I decided to use the Lentils that I soaked last night.

Green lentils with onions, a healthy dose of spices, tomato paste and vegetable broth.  The flavors combined so well and you will definitely  be seeing this dish in the near future.

Pan ‘fried’ tempeh using Olive Oil Pam.

With a side of baked zucchini and eggplant.

This filling meal came in at 334 calories, 20 grams of fiber, and 20 grams of protein.
