Strawberry Oatmeal

I was out of bananas this morning so I used one of the few fresh fruits we had on hand, strawberries!  We are almost out of vegetables as well, guess it’s time to go to the store!  I added some milled flax seeds to the oatmeal this morning.  I loved what it did for the oats and it will definitely be in my morning oatmeal from now on!  I have a Power Yoga class at 12:15 so I better go get ready!

268 calories, 11 grams of protein, and 8 grams of fiber.

    Can you post how you made your crumb topping for the vegenomics penne pumpkin pasta. I have the book so I know how to make the dish I just dont know how to make the crumb topping for single serve.,

    Hi Christie!

    I really modified that part of the recipe to use the ingredients I wanted. I wrote down notes in my book so I’ll just type those here 🙂

    1. Toast 1 slice of Ezekiel 4:9 Bread and then chop into small pieces as well as bigger ‘chunks’
    2. Melt 1tbs (smart balance) in a skillet and stir in the ezekiel, paprika, sea salt, italian seasoning OR whatever spices you have on hand/want
    3. Stir constantly until mixture is lightly coated
    4. Remove from heat and sprinkle over ziti.

    So it’s not the ‘sage’ topping they call for but the sea salt, paprika, and italian seasoning really worked wonders for me. So, that’s all I did for my modification- it was really easy!
