Tuesday’s Activities and a Small Snack

Earlier today, I walked 2.25 miles in a little under 38 minutes.  Tonight, I decided to take it easy and did 35 minutes on the elliptical while watching The Biggest Loser.  It was nice to kind of zone out and forget I was exercising although I was really tempted to run today…  After my work out,  I had a little mug of fiber one with frozen berries and plain light silk:

121 calories, 6 grams of protein, and 17 (!) grams of fiber.

    hey! sorry I didn’t answer your question about my lunches yesterday! but I’m on vacation -_^ That’s so COOL! that you have friends that open-minded! ^_^ My best friends are right with me in the healthy living boat, but the ones I’m stuck eating lunch with certainly aren’t! My lunches vary, but I love (sorry! I’m not vegan/vegetarian!) kath’s tuna salad, only I put it over TONS of crunchy lettuce and usually have pita chips or pretzels and a glass of milk on the side. Nothing beats a good turkey sandwich for me, and I have become addicted to O’coco’s chocolate crisp packs (especially the cinnamon-in the organic section. maybe you can eat them? they are SO GOOD! and really chocolatey! oh! and only 90 calories for a pack). I always have some Stoneyfield lowfat yogurt or one of the Dannon plain individual yogurts for a side (I LOVE all things dairy ^_^) or a carton of skim milk. A new sandwich combo I love is spreading laughing cow cheese on an ezekiel pita (or sanwich bread) and stuffing it with LOTS of spinach ^_^ so creamy good and really filling!! though I don’t think that’s vegan…? A yummy treat I love is kashi go-lean or fiber one cereal mixed into all natural (sugar free) apple sauce! I love how the apple sauce is naturally so sweet, and the cereal absorbs the flavor, or, if you eat it fast enough, stays wonderfully crunchy and grainy! ^_^ I LOVE your lunch ideas!! (I like trying all sorts of soy/vegetarian products too-especially bocca burgers!) One of my FAVORITE sides is a bean salad of 1/2 cup black beans and 1/2 cup edamame mixed with steamed sliced carrots-sooo good! ^_^ Have an amazing spring break!!

    I looked up the O’coco’s chocolate crisp packs and while they are not vegan, they sure look like a great snack! I love stuffing things with spinach as well. I honestly think I eat too much spinach but it’s so good and easy that I can’t help it!

    I do miss Kashi Go Lean as a vegan… but i’ve never mixed fiber one with applesauce- I must try that! Fiber one and pumpkin is a good mix so I bet thats awesome.

    Your bean salad sounds great… I’ll whip that up sometime 🙂
