Pita Pocket and Friends

This is my second to last day pre-packing lunches for awhile which is good news!  The start off lunch, we have a Whole Wheat Pita Pocket stuffed with fresh spinach, 4 slices of Smart Deli Baked Ham, and 1 tbs Roasted Red Pepper Hummus.

On the side, I had edamame, a GIANT carrot, and a mix of strawberries and blueberries.

Lunch comes to a total of 295 calories, 21 grams of protein, and 9 grams of fiber.

    I posted this on one of your older posts.. but I wasn’t sure if you’d see it, so I’ll post it here too!


    I know this is an old post, so not sure if you’ll see it, but what temp do you roast your veggies at? Maybe I’m just being too impatient and not giving them enough time to get all roasty and delicious.. but this seems like it should be so easy!

    Hi erika!

    I usually roast my vegetables at 400 degrees for about 15 minutes or so. I don’t watch the time, I base things on how they look. I do however take them out about halfway through and spray them with Olive Oil Pam so they don’t dry out. Before serving, I salt and season them. I’ve never been formally taught how to roast vegetables so this is the method that has come naturally through some trial and error.
