Sunday Brunch

I woke up a little past Ten o’clock this morning and really wasn’t in the mood to eat.  So, I chatted on the phone a bit with my Mom and read some of my book.  My Family is at my brothers basketball Tournament and I have to give him a shout out!  Congrats on your first win, Greg!!!  He scored 9 points this morning and helped his team win their first game! (He also promised me the first basket :) )

Brunch today consisted of a Tofu Scramble ‘Egg’ Sandwich and fresh fruit.

Freshly mangled  cut mango and banana.  The mango was really ripe and I seriously mangled that bad boy.  The rest will go into smoothies and oatmeal!

Before assembling:  Scrambled Tofu, Spinach, Bell Peppers, and Ezekiel 4:9 Bread.

Even though brunch was great, I had 15 g (1 tbs) of Chocolate Chips afterwards.  I wanted something sweet and that really hit the spot!  With chocoalte chips, brunch was 416 calories, 21 grams of protein, and 12 grams of fiber.

I think I need to hide the chocolate chips :P

Microwaving Amy

Everytime I go to the store, I stand in front of the Frozen Section looking at all of the goodies by Amy’s.  I finally decided to just go for it and have a frozen dinner.  After studying the vegan choices, I settled on…

Amy’s Indian Spinach Tofu Wrap.

Inside shot!  I was both surprised and pleased at the flavor of this wrap!  Since it was frozen, I wasn’t expecting much but it really tastes great and the spinach doesn’t have that canned spinach taste- if you know what I mean.  I LOVED it and now I know i’ll have a great option in the future!  (I still prefer cooking my food, not microwaving!!)

With the same spinach and peppers from last night, this meal came out to be 355 calories, 13 grams of protein, and 9 grams of fiber.

IT’S FRIDAY!!

I’m SO excited for the weekend!!  I don’t have any homework and for the first time in a couple weeks, I am going to sit down and watch A LOT of TV and make some vegan staples!  I’m sure that’s not too exciting but there are so many shows on my DVR that I haven’t watched and I have be dying to see them! 

My mid-morning snack was a small apple.

For lunch I did a simple Dijon Tofu Salad and a Bowl of Fruit.

Strawberries, Grapes, and Cantaloupe.

Salad with Spinach, Carrots, Red Peppers, Cucumbers, and Dijon Mustard Tofu.

All of this came out to 342 calories, 14 grams of protein, and 12 grams of fiber.

Burning Up!

Since it’s so nice out today, I ate lunch outside with my friends!  It actually got so warm that we went inside for the last five minutes of lunch!  Lunch is light today so I can have a big slice of sour dough bread this afternoon!

I’m going outside and then enjoying a nice, BIG snack!!

It’s Official…

… School is now a joke!

Twenty more school days and I am free!  I decided school was officially a joke when I got assigned a ‘kiddie book’ project.  That’s right, I have to create my own five page Children’s book and it is considered a ‘big grade’.  Ahh, the joys of being a senior! 

Now onto lunch!

Sliced Apples with Cinnamon.  I was starving this morning and had these for my snack at 10:20.  They almost held me off until lunch.

Salad with Spinach, Cucumbers, Carrots, Chickpeas, Sliced Tofu, Toasted Almonds, and 1 tbs Annie’s Woodstock dressing.  This dressing is becoming a quick favorite… almost as good as Goddess dressing! 

Lunch as 365 calories, 18 grams of protein, and 12 grams of fiber.

I’m off to go bake some bread with the starter Matt made for me, I hope it turns out well!

No Water!

I woke up this morning to the worst news… our house has no water!  A water pipe burst underneath the house and we have no running water until tomorrow.  I am going to take a cycle class at 2 just so I can shower at the YMCA afterwards.  I am pretty bummed and since we can’t wash dishes, I made a quick platter of fresh foods and tofu.

This mini meal was 208 calories, 12 grams of protein, and 8 grams of fiber.  I’ll figure out something after cycle class…

Asian Explosion

When it comes to vegan cooking, Stir Fry is one of my favorite dishes.  It’s easy to assemble and makes my palate dance with delight!  If you couldn’t guess, tonight’s dinner is Asian Stir Fry with Baked Tofu, Brown Rice, and a fresh Broccoli Slaw.

Bagged Broccoli slaw with red wine vinegar, s+p, tomato basil garlic, and nayonaise.  This was really great, so great that it’s in my lunch tomorrow!

Oven Baked and Marinated Tofu.

Stir Fry Veggies!  Broccoli, water chestnuts, carrots, onions, mushrooms, red peppers, and celery.  This mix is actually from Birds Eye and is honestly better than TJ’s frozen stir fry mix.  I’m not sure why but it stays crisp even though it’s frozen.  This picture doesn’t do it any justice.  I kind of splurged on sodium for this meal… lots of ‘low sodium’ soy sauce!

and a side of Brown Rice.

Dinner was 408 calories, 17 grams of protein, and 7 grams of fiber.

Lucky Rice

I lost track of time while I was doing a project and before I knew it, it was 7 o’clock!  My family usually eats late but this is really late for us!  Since I was caught up with my work, I didn’t snack.  To make up for it, I had a big dinner!

Brown Rice with Bell peppers, chickpeas, and Mrs. Dash Tomato-Basil Garlic.  I accidently made two servings of rice so I had to take out half of it!  I’m glad I caught that mistake because it would have made this meal massive.  The pictures include both servings,  I guess I was lucky!

Homemade Tofu ‘Sour Cream’ and Guacamole.  The sour cream was tofu, apple cider vinegar, olive oil, lemon juice, and salt.  It didn’t taste like sour cream but it was tangy and went perfectly with the meal.

My mom made fresh green beans for the family so I snagged a few!

 The meal came out to be 601 calories, 18 grams of protein, and 15 grams of fiber.  Today was really balanced and I hit my new calorie goal!  I didn’t try to balance out today’s food and look what happened!

Blueberry Corn Pancakes!

I’ve been waiting for this morning ever since I accidently deleted my pictures last week… Veganomicon’s Blueberry Corn Pancakes!  They are not a pretty as before (go figure) but they are so, so good!  I think I added too many blueberries.

This vegan feast comes out to 263 calories, 14 grams of protein, and 6 grams of fiber!

Spicy Polenta Casserole

Using Kath as an inspiration, I made a Polenta Casserole tonight!

The bottom layer of my casserole consisted of black beans, diced tomatoes, mild green chili peppers, bell peppers, and an assortment of SPICY spices!

Next, I topped it with soft polenta and tofu ricotta.  I don’t have any vegan cheese on hand since I tend to eat it too quickly so I made the ricotta using tofu, lemon, and garlic.  Not the traditional tofu ricotta but it was the flavor I was after so it worked out!

I baked it in the oven at 375* until the polenta got thick and the tofu browned a bit on the top.

I served my casserole with Trader Joe’s Brittany Blend and in the end, drizzled the bowl with 1/4 cup soy yogurt.

It wasn’t pretty, but boy was it good!  This super filling meal was 404 calories, 22 grams of protein, and 14 grams of fiber.
