Eggplant-Polenta Stack

For snack this afternoon, I had some Sour Dough with Natural Peanut Butter.

215 calories, 7 grams of protein, and 2 grams of fiber.

I wanted to create something unique for dinner so I decided on using two of my favorite ingredients: eggplant and polenta! 

Eggplant Stack with Polenta and Earth Fare Marinara on Top.

With a side of Baked Zucchini and Canned Cut Green Beans.

and Crispy Pan ‘Fried’ Tempeh.

After dinner, my stomach was a little upset so I had a handful or two of Trader Joe’s High Fiber O’s.  My pain medicine has really hurt my stomach all day, I am calling the Doctor tomorrow to get a new kind.

Including the O’s, Dinner was 517 calories, 23 grams of protein, and 23 grams of fiber!  It’s funny how my protein and fiber numbers match up a lot of the time!

Eating Outside

As a senior at my school, I have the privilege of eating outside.  I usually just sit inside but it’s so nice out that my friends and I ate lunch on a picnic bench while enjoying the breeze.  It was nice to have a different surrounding and I’ll definitely be eating outside more often!  Lunch was pretty good but extremely simple.

Carrots and Strawberries.  I packed them in the same container to save room- I didn’t eat them together!  I ate all the carrots at 11:30 and had the strawberries at 1:15 with my lunch.  Despite my high fiber breakfast I was hungry!  I woke up starving so maybe that just carried on?

The main part of my lunch was this great salad!  Made up of spinach, cucumber slices, chickpeas, artichokes, and crispy tempeh!  I dipped my fork into 1 tbs of Annie’s Woodstock Dressing.  This is the first time I have had this dressing and I actually really like it.  It’s not as good as the Goddess Dressing but it’s a great change!

Lunch was 324 calories, 17 grams of protein, and 17 grams of fiber!

I am leaving at 4:10 so I can make it to my cycle class.  The snack and work out post will be pretty late today!  Have a great afternoon!

Rainy Running and a Lentil Lunch

Today’s run was definitely fun, it rained the entire time!  Like I mentioned earlier, I ran with my dad so it was great to catch up with him.  He was out of town this week and this little bonding experience was just what we needed.  He is newer to running (he plays basketball and cycles) so we just did 3.5 miles in 33:23.  I loved running with him, we talked about exercise majority of the time! 

After running, I had some grapes and cantaloupe to hold me off while I cooked lunch.  No picture though, I was really hungry! 

For lunch, I had Green Chili and Tomato Lentils, Tempeh, and Mini Whole Wheat Pitas.

The 100% WW Pitas are so adorable!  I bought them at Trader Joe’s!

For today’s Tempeh, I simmered the Tempeh with the lentils so it could absorb the flavors.

Green lentils simmered with Green Chilis, tomato, tomato paste, and spices.  I didn’t use too many spices today, I wasn’t in the mood for a super spicy dish.

To eat this dish, I stuffed a tiny bit of lentils and tempeh into the whole wheat pitas until I finished all 6 halves. After that, I just enjoyed the dish.  It was really fun to eat!  Overall, it was light on vegetables so I’ll have to fit those in later today!  I was thinking of making cupcakes today but I’m not sure if I am in the mood… we’ll see!

Including the fruit from earlier, Lunch was 388 calories, 22 grams of protein, and 21 grams of fiber.

Raisin Couscous and Tempeh Salad

It’s SO BEAUTIFUL out!  I am going to make this really fast so I can run to and from the gym (a little over 4 miles).

Lunch today was beyond good and it was hearty so I will be full for awhile.  I made a Raisin Couscous and Tempeh Salad.

Whole Wheat Couscous with a mini box of raisins, spinach, tempeh, carrots, and slivered almonds.

Perfectly Crisped Tempeh

And a tbs of Annie’s Goddess Dressing.

Lunch was 442 calories, 20 grams of protein, and 14 grams of fiber.  It was so, so good!

Spicy Chili and Tempeh Burrito

Dinner was really quick and easy, I hardly had to do anything!  I know I mentioned I was low on fiber earlier but now I have had too much.  My stomach is yelling at me now!

For my burrito, I used a light Flat Out wrap and filled it up with 1/4 cup Amy’s Lower Sodium Spicy Chili and 1/2 serving Tempeh.  I topped it with 1/4 cup tomatillo salsa and then baked it in the oven until the insides were warm and the edges were crispy.

On the side, I had a lot of summer squash and fresh guacamole.

434 calories, 26 grams of protein, and 28 grams of fiber!!

While I was putting this together, I forgot that Flat Out wraps have such a high fiber content!  Like I said, my stomach is really unhappy… I think it was worth it though :P

Shopping Trip and Crispy Tempeh Salad

Despite the slight drizzle, I decided to walk to the groccery store to pick up a few items.  I should be in school but yesterday was pretty long so my parents decided to let me stay home.   The walk wasn’t too bad, about ten minutes each way.   I spent $20.03 without even thinking, what am I going to do in college?

After walking in the cold, I was pretty hungry but wanted something I could just throw together.  Hence my Crispy Tempeh Salad.

Dipped into 1 tbs Annie’s Goddess Dressing and a Wasa Cracker on the side.  I also had a cup of coffee with silk creamer.

Lunch comes out to be 390 calories, 15 grams of protein, and 14 grams of fiber!

Curried Lentils with Tempeh

I had a pretty good run today, 4 miles in 36:05.  It was pretty warm so I did struggle a bit at the end.  After running, I had a huge appetite so I decided to use the Lentils that I soaked last night.

Green lentils with onions, a healthy dose of spices, tomato paste and vegetable broth.  The flavors combined so well and you will definitely  be seeing this dish in the near future.

Pan ‘fried’ tempeh using Olive Oil Pam.

With a side of baked zucchini and eggplant.

This filling meal came in at 334 calories, 20 grams of fiber, and 20 grams of protein.

Tomato Couscous with Tempeh

Tonights dinner was a Veganomicon inspired Tomato Coucous.  I used whole wheat couscous, tomato juice, diced tomatoes, olive oil, and seasoning.  On top we have a tomato sauce simmered Tempeh.

On the side, Trader Joe’s Brittany Blend which consists of green beans, wax beans, and baby carrots.

All together, a total of 460 calories, 21 grams of protein, and 17 grams of fiber.

 My day was a little light on calories so I had ‘dessert’.  Two organic weetabix whole grain biscuits, 1 cup of warmed unsweetened almond milk, .5 cup blueberries, and some stevia.  Once the milk hit the biscuits, they puffed up and sort of resembled oats.  Yum!  201 calories, 5 grams of protein, and 7 grams of fiber.

Tempeh Thursday

I wasn’t in the mood to slave over something in the kitchen tonight so I kept it simple.  Tonight for dinner we have 2 oz of Organic Three grain tempeh, mashed cauliflower with smart balance light buttery spread, and a mix of spinach and eggplant.  I also had 2 tbs of Heinz reduced sugar ketchup which isn’t shown in the picture.

The Tempeh was store bought and to prepare it, I sprayed a pan with olive oil Pam and lightly browned each side.  I ended up dipping it in the ketchup to add a little bit of flavor.  I love tempeh for it’s nutty taste and amazing nutritional facts!

Overall, the meal was 255 calories, 16 grams of protein, and 14 grams of fiber.  I have room left in my calories for dessert tonight, now I get to brainstorm!

 Dessert Update!

For dessert, I had a Caramel Nut Brownie Luna Bar!  It was SO good and took me about 20 minutes to finish.  No picture though! 

190 calories, 9 grams of protein, and 4 grams of fiber.
