I’m SO excited for the weekend!! I don’t have any homework and for the first time in a couple weeks, I am going to sit down and watch A LOT of TV and make some vegan staples! I’m sure that’s not too exciting but there are so many shows on my DVR that I haven’t watched and I have be dying to see them!

My mid-morning snack was a small apple.
For lunch I did a simple Dijon Tofu Salad and a Bowl of Fruit.

Strawberries, Grapes, and Cantaloupe.

Salad with Spinach, Carrots, Red Peppers, Cucumbers, and Dijon Mustard Tofu.

All of this came out to 342 calories, 14 grams of protein, and 12 grams of fiber.

It was so nice to leave school early!! My Doctors appointment went great and my blood pressure is perfect… for some reason I always stress out about those silly numbers when I get them checked! On the way home, I stopped by Trader Joe’s for some staples and a treat or two!

- Whole Wheat Buns (threw these in the freezer, they thaw out SO well!)
- Creamy Natural Peanut Butter
- Semi Sweet Chocolate chips
- Kiwis!
- High Fiber O’s
- Dried Granny Smith Apples - I’m excited to toss these into salads!
- WW Couscous
- Tempeh
After shopping, I finally made it home and started putting together lunch!

On the side, a Spinach, Mango, and Almond Salad with 1 tbs Annie’s Goddess Dressing.

HOT SANDWICH! Grilled Eggplant, Grilled Tofu with Dijon mustard, Spinach, and two slices of Sourdough bread! I made this in my grill pan which I have neglected for so long! Easy grilled veggies will be on the menu more often!

Lunch was 404 calories, 18 grams of protein, and 7 grams of fiber!

… School is now a joke!
Twenty more school days and I am free! I decided school was officially a joke when I got assigned a ‘kiddie book’ project. That’s right, I have to create my own five page Children’s book and it is considered a ‘big grade’. Ahh, the joys of being a senior!
Now onto lunch!

Sliced Apples with Cinnamon. I was starving this morning and had these for my snack at 10:20. They almost held me off until lunch.

Salad with Spinach, Cucumbers, Carrots, Chickpeas, Sliced Tofu, Toasted Almonds, and 1 tbs Annie’s Woodstock dressing. This dressing is becoming a quick favorite… almost as good as Goddess dressing!

Lunch as 365 calories, 18 grams of protein, and 12 grams of fiber.
I’m off to go bake some bread with the starter Matt made for me, I hope it turns out well!

I’m not sure if it was stress from my tests or my allergies, but after taking my tests this morning I felt really sick! I called my mom and she signed me out of school. I promptly passed out on the couch until 3 PM! Since I pre-packed my lunch for school, I decided to eat that rather than make something new. I feel pretty good now, maybe I just needed some sleep?
For lunch, I had a Salad with a Veganomicon Bean Burger and Sliced Fruit.

Sliced Apples and Strawberries.

Spinach, Carrots, Cucumber, Artichokes, Black Bean burger and Annie’s Goddess Dressing. I also had a Wasa Cracker on the side.

This meal came out to be 370 calories, 18 grams of protein, and 15 grams of fiber.
Gosh, I’m still sleepy!

As a senior at my school, I have the privilege of eating outside. I usually just sit inside but it’s so nice out that my friends and I ate lunch on a picnic bench while enjoying the breeze. It was nice to have a different surrounding and I’ll definitely be eating outside more often! Lunch was pretty good but extremely simple.

Carrots and Strawberries. I packed them in the same container to save room- I didn’t eat them together! I ate all the carrots at 11:30 and had the strawberries at 1:15 with my lunch. Despite my high fiber breakfast I was hungry! I woke up starving so maybe that just carried on?

The main part of my lunch was this great salad! Made up of spinach, cucumber slices, chickpeas, artichokes, and crispy tempeh! I dipped my fork into 1 tbs of Annie’s Woodstock Dressing. This is the first time I have had this dressing and I actually really like it. It’s not as good as the Goddess Dressing but it’s a great change!

Lunch was 324 calories, 17 grams of protein, and 17 grams of fiber!
I am leaving at 4:10 so I can make it to my cycle class. The snack and work out post will be pretty late today! Have a great afternoon!

It’s officially the weekend! I am going to post lunch really fast and then crash at Borders for awhile, I love reading books for free there! Afterwards, I’ll head on over to Earth Fare for Vegan Cheese (tonight is pizza night!!) and then workout.
I’ve never actually had a Waldorf Chicken salad and I am always seeing versions of it on recipe websites! So, I decided to make my own veganized Waldorf Salad!

Trader Joe’s Chicken-less Strips, celery, raisins, apple, nayonaise, and an assortment of spices. It was delicious and I can see myself making it a lot more this summer since it’s such a cool, refreshing dish!

On the side, I had roasted sweet potato, asparagus, broccoli, carrot, and eggplant all dipped into 1 tbs of Annie’s Goddess Dressing. I love Goddess dressing right now, I can’t get enough of this tangy dressing!

Today’s lunch was 449 calories, 28 grams of protein, and 14 grams of fiber!

Breakfast this morning tasted really good but I was hungry two hours before lunch! By the time lunch rolled around, my stomach was growling and yelling at me. While I like the change up, I really think oatmeal is the only way to go.
I did a classic soup and salad for lunch.

Pacific Creamy Butternut squash dressed up with a tiny bit of soy yogurt. I love this soup so much, I could honestly eat it everyday! I also loved dressing this up, it looked so pretty!

My salad had spinach, slivered almonds, raisins, sliced carrots, broccoli, and a boca burger.

Lunch was really good and I’m glad I had soup and salad because if I would have had a wrap or burger it would have been gone in 5 minutes- I was that hungry! I’m still hungry so I’ll have a snack here in a little bit.
Lunch was only 287 calories, 20 grams of protein, and 12 grams of fiber.

Today’s lunch was so big and filling! I want to tell you what I had so I’m going to jump straight into it!
First off, Sweet Potato Salad!

Sweet potatoes with celery, raisins, almonds, and a stevia ‘sauce’. To make the sauce, I put some water in a pot added stevia, cinnamon, ginger, and nutmeg. I let it boil up until it carmelized and became a sticky mess. Then, I threw in the raisins which absorbed most of the sauce. It was definitely an experiment but it worked out wonderfully!

Next, A BIG burger! A boca burger with mustard, nayosaise, spinach, tomato, all on a Trader Joe’s whole wheat bun! The bun really made it delicious, I’ll definitely be eating these a lot more often!

Lunch was 458 calories, 24 grams of protein, and 14 grams of fiber

Happy Friday everyone, I’m so excited it’s officially the weekend! I’m also going to the local trail at 4 pm so i’m pretty excited about that as well, I’ll be running with someone else so it should be a nice change! Ok, lets move onto some food…

For snack today, I had a big apple that had been calling my name! It was nice to eat a whole apple and not just slices, I think it took my entire break to eat it… 20 minutes?

For lunch, I kept things simple with a really tasty salad. Spinach leaves, slivered almonds, carrots, cherry tomatoes, fresh garlic, tofu, s+p, and a squeeze of lemon juice!

Lunch and snack came to 317 calories, 15 grams of protein, and 11 grams of fiber!
Well, i’m off to make a snack and then go run!

It is so Dreary and Rainy today! It’s honestly miserable out… and I haven’t had a good day at all so it doesn’t help. After posting this i’m going to crawl into bed and study. I’ll save exercise for later tonight.
I had a light lunch today, I wasn’t really in the mood for anything heavy so I stuck to a salad and fruit. Simple but really refreshing.

Cantaloupe, Blueberries, and Strawberries.

Salad with fresh spinach, baby carrots, Trader Joe’s Chicken-less Strips and a ‘dressing’ made of lemon juice, pepper, and homemade soy yogurt.

Lunch was 240 calories, 24 grams of protein, and 7 grams of fiber.
Since it’s so dreary out, I really wanted something warm and comforting for my after school snack. I figured the best thing would be a baked pancake.

Baked in the oven, I ate this straight out of the pan! It was made out of Aunt Jemima’s Whole Wheat Pancake Blend and some frozen berries. It really hit spot and helped balance out my light lunch by adding 293 calories, 9 grams of protein, and 10 grams of fiber.
