I’m SO excited for the weekend!! I don’t have any homework and for the first time in a couple weeks, I am going to sit down and watch A LOT of TV and make some vegan staples! I’m sure that’s not too exciting but there are so many shows on my DVR that I haven’t watched and I have be dying to see them!

My mid-morning snack was a small apple.
For lunch I did a simple Dijon Tofu Salad and a Bowl of Fruit.

Strawberries, Grapes, and Cantaloupe.

Salad with Spinach, Carrots, Red Peppers, Cucumbers, and Dijon Mustard Tofu.

All of this came out to 342 calories, 14 grams of protein, and 12 grams of fiber.

Since it’s so nice out today, I ate lunch outside with my friends! It actually got so warm that we went inside for the last five minutes of lunch! Lunch is light today so I can have a big slice of sour dough bread this afternoon!

Cantaloupe and Grapes.

Wild Woods Tofu Burger on a bed of Spinach- I love this! It tasted so good.. I wish it didn’t cost 2.99 for TWO patties!

‘The Fixings’ – Avocado slices, Cucumber Slices, and Ketchup.

Lunch was 277 calories, 14 grams of protein, and 9 grams of fiber.
I’m going outside and then enjoying a nice, BIG snack!!

I woke up this morning to the worst news… our house has no water! A water pipe burst underneath the house and we have no running water until tomorrow. I am going to take a cycle class at 2 just so I can shower at the YMCA afterwards. I am pretty bummed and since we can’t wash dishes, I made a quick platter of fresh foods and tofu.

Carrots and Sliced Cucumbers.

Apple Slices and Cantaloupe.

A slice of plain Tofu.

This mini meal was 208 calories, 12 grams of protein, and 8 grams of fiber. I’ll figure out something after cycle class…

I’m not sure if it was stress from my tests or my allergies, but after taking my tests this morning I felt really sick! I called my mom and she signed me out of school. I promptly passed out on the couch until 3 PM! Since I pre-packed my lunch for school, I decided to eat that rather than make something new. I feel pretty good now, maybe I just needed some sleep?
For lunch, I had a Salad with a Veganomicon Bean Burger and Sliced Fruit.

Sliced Apples and Strawberries.

Spinach, Carrots, Cucumber, Artichokes, Black Bean burger and Annie’s Goddess Dressing. I also had a Wasa Cracker on the side.

This meal came out to be 370 calories, 18 grams of protein, and 15 grams of fiber.
Gosh, I’m still sleepy!

The air is cold and the sky is grey, it looks like rain! I am going to make this post as fast as possible so I can run to the gym and beat the rain! I really don’t want to get rained on today! I’ll read everything you guys posted after my run
Ok, Lunch time!

Freshly cut carrots and cucumbers with 1 tbs of Annie’s Goddess Dressing

A snack bag with grapes and cantaloupe.

1/3 cup Silk Yogurt with milled flax seeds. It doesn’t look look but it’s a great combo!

and a Veganomicon Chickpea Cutlet on a tiny bed of fresh spinach.

Lunch was 410 calories, 17 grams of protein, and 11 grams of fiber!

It’s so great to see the sun again, I am definitely going to spend a good amount of time outside today! I can’t believe it’s Wednesday, it definitely feels like a Friday!
Lunch today was really simple but delicious as always!

To start off, I had freshly cut cantaloupe.

Spinach, Bell Peppers, and Garlic! It’s been awhile since i’ve had a large amount of garlic so this hit the spot!

My main part of lunch was a Turkey and Bacon Sandwich. I used 4 slices of Smart Deli Turkey, 2 slices Smart Bacon, 1 tbs Nayonaise, Spinach, and mustard all on a Trader Joe’s Whole Wheat bun. The flavor combo was really great but definitely way too much sodium. Next time, i’ll choose between the turkey or bacon!

334 calories, 27(!) grams of protein, and only 5 grams of fiber.
I’m low on fiber today… I guess i’ll have to have a fiber packed snack

Good morning everyone!
For breakfast this morning, I planned out a nice spread of toast, bacon, and fruit. Toast and bacon were my childhood favorites so this breakfast was a nice change and reminded me of the good ol’ days.

Fresh Strawberries.

Two slices of Smart Bacon. I sprayed the pan with Olive Oil Pam and lightly ‘fried’ them until they were crispy.

Two slices of Ezekiel 4:9 Sprouted bread with 2 tbs of tofutti Better Than Cream Cheese spread.

With coffee, Breakfast comes to 305 caloris, 16 grams of protein, adn 8 grams of fiber. That’s a lot more protein than I had guessed!
Time for school!

I’m taking a brief mental break to eat a small snack and blog about it!

A bowl of banana, cantaloupe, and grapes.

As well as a giant carrot to munch on!
This snack comes in at 138 calories, 2 grams of protein, and 5 grams of fiber. I just realized I haven’t worked out today. Sunday is my off day but I need to sneak in a little walk… homework is driving me crazy!

I am so tired today! My curfew is midnight so I honestly didn’t get to bed until well after 1 am! I had a really great time last night and I still can’t believe I ran into Kath! I didn’t even pick out where we ate so I guess it was just a crazy coincidence. She mentioned to my date that we ‘met on the internet’ so I sort of had to explain that! It was funny and maybe I will have the guts to take a picture next time out… we’ll see!
Speaking of Kath, I decided to take her idea and put a smoothie in a bowl!

- 1/2 cup Frozen berry mix (raspberries, blackberries, blueberries, and 1 strawberry)
- 3/4 cup soy yogurt
- 1 tbs milled flax seeds
- stevia packet
- and my secret ingredient…. 1 cup spinach!
I love adding spinach to smoothies because you can’t taste it at all. So, it’s just a really easy way to add in some extra nutrition!

It’s almost lunch time so my smoothie was pretty light, only 150 calories, 8 grams of protein, and 7 grams of fiber.

I pre-planned the next week of meals so for now on my meals are going to be a bit more diverse! To change things up, I have fruit and yogurt for breakfast today.

Fresh mango, kiwi, and banana.

I dipped some of my fruit into 1/2 cup of homemade soy yogurt with stevia and milled flax seeds.

With coffee, Breakfast turned out to be 225 calories, 6 grams of protein, and 8 grams of fiber.
