Burning Up!

Since it’s so nice out today, I ate lunch outside with my friends!  It actually got so warm that we went inside for the last five minutes of lunch!  Lunch is light today so I can have a big slice of sour dough bread this afternoon!

Cantaloupe and Grapes.

Wild Woods Tofu Burger on a bed of Spinach- I love this!  It tasted so good.. I wish it didn’t cost 2.99 for TWO patties!

‘The Fixings’  – Avocado slices, Cucumber Slices, and Ketchup.

Lunch was 277 calories, 14 grams of protein, and 9 grams of fiber.

I’m going outside and then enjoying a nice, BIG snack!!

A Sleepy Salad

I’m not sure if it was stress from my tests or my allergies, but after taking my tests this morning I felt really sick!  I called my mom and she signed me out of school.  I promptly passed out on the couch until 3 PM!  Since I pre-packed my lunch for school, I decided to eat that rather than make something new.  I feel pretty good now, maybe I just needed some sleep?

For lunch, I had a Salad with a Veganomicon Bean Burger and Sliced Fruit.

Sliced Apples and Strawberries.

Spinach, Carrots, Cucumber, Artichokes, Black Bean burger and Annie’s Goddess Dressing.  I also had a Wasa Cracker on the side.

This meal came out to be 370 calories, 18 grams of protein, and 15 grams of fiber.

Gosh, I’m still sleepy!

Beanball Trio

Lunch was really good today, I was excited to eat it!  I ate outside again since it is so beautiful out!  I am not sure what I am doing for my work out.   I’m supposed to run on Wednesdays but my left foot is bothering me for some reason so I might just do a cycle class instead.  I guess i’ll see how I feel in a few hours!

For lunch today, I had Spaghetti Squash with Veganomicon Beanballs.

Before lunch, I had a mid-morning snack of just a plain Vegan Boca Burger.  It may seem like an odd snack but that’s what I was craving and it was the perfect snack to hold me off for for lunch.

Spaghetti Squash, spinach, bell peppers, Earthfare Marinara, and three Beanballs.

Everything came in at 408 calories, 29 grams of protein, and 17 grams of fiber!

Burger and Sweet Potato Salad

Today’s lunch was so big and filling! I want to tell you what I had so I’m going to jump straight into it!

First off, Sweet Potato Salad!

Sweet potatoes with celery, raisins, almonds, and a stevia ‘sauce’.  To make the sauce, I put some water in a pot added stevia, cinnamon, ginger, and nutmeg.  I let it boil up until it carmelized and became a sticky mess.  Then, I threw in the raisins which absorbed most of the sauce.  It was definitely an experiment but it worked out wonderfully!

Next, A BIG burger!  A boca burger with mustard, nayosaise, spinach, tomato, all on a Trader Joe’s whole wheat bun!  The bun really made it delicious, I’ll definitely be eating these a lot more often!

Lunch was 458 calories, 24 grams of protein, and 14 grams of fiber

Very Filling Lunch!

I really wanted to get some fresh air today so I walked two loops around my neighborhood.  The walk ended up being 4.5 miles long but I swear it didn’t feel long at all!  I brought my water bottle with me and by the end of it, my appetite had returned!

For lunch today, I knew I really wanted some soup so I had 10 oz of Creamy Organic Butternut Squash soup.  I am buying this soup again, I need to write down the name brand so I can remember- it’s that good!

I also had a boca burger with mustard, nayonaise, and spinach.  I ended up picking apart the sandwich and dipping the Ezekiel Bread into the soup!

On the side, I had a mountain of baked summer squash!  You can still see the steam in the picture!

This filling lunch was 349 calories, 24 grams of protein, and 14 grams of fiber!

Burger and Chips!

Tonights dinner is far from healthy   fantastic! 

First up, I heated up a leftover black bean burger from Veganomicon.  I topped it with salsa and layed it on a bed of fresh spinach.

Now to the meal’s splurge: chips and dip!  One Serving of Tostitos Multi-Grain Chips and 1/3 cup fresh guacamole.  I love these tostitos but don’t let the name fool you, they are no better than normal chips!

425 calories, 18 grams of protein, and 14 grams of fiber.

After dinner, I snacked on some fresh fruit, no picture though!

Black Bean Bash!

Before I start today’s dinner post, I have to talk about the cutest license plate I saw!  It was… avocado.  I thought it was so funny!  For Dinner tonight, I whipped out the handy Veganomicon book and made the black bean burgers i’ve been dying to try.  They were pretty easy to make and I learned from past mistakes and kept a hand rag nearby (kneading these can get very messy!)

I chose to bake my patties in the oven at 350* for 30 minutes or so, flipping half way through.  The baked burgers were really chewy, I loved the texture of these!

To dress up my burger, I topped it with 1/4 cup mashed avocado, lemon, and sea salt.  I used a homemade potato bun- I still love these buns, so chewy!

On the side, I had baked squash ‘fries’ dipped into ketchup.

Dinner was 435 calories, 21 grams of protein, and 13 grams of fiber!

The weather has been so nice today… I’m actually going to go walk one of the dogs!
