Spicy Chili and Tempeh Burrito

Dinner was really quick and easy, I hardly had to do anything!  I know I mentioned I was low on fiber earlier but now I have had too much.  My stomach is yelling at me now!

For my burrito, I used a light Flat Out wrap and filled it up with 1/4 cup Amy’s Lower Sodium Spicy Chili and 1/2 serving Tempeh.  I topped it with 1/4 cup tomatillo salsa and then baked it in the oven until the insides were warm and the edges were crispy.

On the side, I had a lot of summer squash and fresh guacamole.

434 calories, 26 grams of protein, and 28 grams of fiber!!

While I was putting this together, I forgot that Flat Out wraps have such a high fiber content!  Like I said, my stomach is really unhappy… I think it was worth it though :P

Mountains of Kale

I can’t stress how wonderful it is to have planned meals!  It’s so easy and my lunch was so good today that I didn’t need a snack!  Tonight, I had Salsa Rice with Black beans, Chikn Patty, Guacamole, and kale and took a plethora of pictures!

I loved this dinner, there is just something so good about avocados, rice, and salsa! Dinner comes to 490 calories, 27 grams of protein, and 16 grams of fiber!

I’m going to go work out, maybe have a snack, and then finish up some school work!

Burger and Chips!

Tonights dinner is far from healthy   fantastic! 

First up, I heated up a leftover black bean burger from Veganomicon.  I topped it with salsa and layed it on a bed of fresh spinach.

Now to the meal’s splurge: chips and dip!  One Serving of Tostitos Multi-Grain Chips and 1/3 cup fresh guacamole.  I love these tostitos but don’t let the name fool you, they are no better than normal chips!

425 calories, 18 grams of protein, and 14 grams of fiber.

After dinner, I snacked on some fresh fruit, no picture though!

Shopping Trip and Crispy Tempeh Salad

Despite the slight drizzle, I decided to walk to the groccery store to pick up a few items.  I should be in school but yesterday was pretty long so my parents decided to let me stay home.   The walk wasn’t too bad, about ten minutes each way.   I spent $20.03 without even thinking, what am I going to do in college?

After walking in the cold, I was pretty hungry but wanted something I could just throw together.  Hence my Crispy Tempeh Salad.

Dipped into 1 tbs Annie’s Goddess Dressing and a Wasa Cracker on the side.  I also had a cup of coffee with silk creamer.

Lunch comes out to be 390 calories, 15 grams of protein, and 14 grams of fiber!

Black Bean Bash!

Before I start today’s dinner post, I have to talk about the cutest license plate I saw!  It was… avocado.  I thought it was so funny!  For Dinner tonight, I whipped out the handy Veganomicon book and made the black bean burgers i’ve been dying to try.  They were pretty easy to make and I learned from past mistakes and kept a hand rag nearby (kneading these can get very messy!)

I chose to bake my patties in the oven at 350* for 30 minutes or so, flipping half way through.  The baked burgers were really chewy, I loved the texture of these!

To dress up my burger, I topped it with 1/4 cup mashed avocado, lemon, and sea salt.  I used a homemade potato bun- I still love these buns, so chewy!

On the side, I had baked squash ‘fries’ dipped into ketchup.

Dinner was 435 calories, 21 grams of protein, and 13 grams of fiber!

The weather has been so nice today… I’m actually going to go walk one of the dogs!
