Thats what a man at the gym said to me when I was leaving!!
Since I didn’t exercise yesterday, I decided to do something different and work out in the morning! I went to gym bright and early and did the 5:45 cycle class!
- 60 minute Power Cycle Class.
Boy was that hard!! I wore a grey t-shirt (my mistake) and it was soaked by the end of class! I haven’t had a workout this good in a long, long time!!
As much as I love oatmeal for breakfast, I am in the mood for a little change… so, I made some pumpkin oatmeal pancakes! I ate two before class and I’m actually eating the last one as I type this up!

1/2 cup pumpkin, oats, 1/4 cup light silk, stevia, baking powder, and cinnamon!

The pancakes were really great and I hope they keep me full as long as oatmeal does. The three pancakes came to be 238 calories, 10 grams of protein, and 11 grams of fiber. I love adding pumpkin to oats because it really has a lot of fiber in it!
Taking a cycle class this morning was fun and challenging… I can tell today is going to be great

This afternoon’s workout:
- 50 minute spin class
- Free Weights
The cycle class was really, really good! I loved the instructor so much that I am going to make an effort to go to all of her classes even if she only teaches two a week. She made the class fly by and I felt challenged the entire time! After working out, I was on my way home and found out that people were looking at our house. Since they were there I couldn’t cook! Instead of cooking, I got Sushi from Kabuto’s and brought it home later.

Sorry tonight’s dinner post is SO late! I got wrapped up in some things and lost track of time… here is what I had to eat five hours ago! Before I get to dinner, workout was a 45 minute cycle class.

Lemon Chickpea Lentil Soup from Eat, Drink, and Be Vegan. I left it thicker than the recipe called just so it could be a little heartier. I also changed some ingredients around and used green lentils instead of red so the color came out a little odd. The flavors were dead on though.

Veganomicon Black Bean Burger on a TJ Whole Wheat Bun with Spinach, Ketchup, and Mustard.

With carrots on the side, dinner was 478 calories, 27 grams of protein, and 20 grams of fiber.
While I was working away, I munched on whole grain Tostitos and my mom’s black bean and corn salsa. I mindlessly ate and didn’t measure my food so I’m estimated an extra 250-300 calories of snacking there… Sorry this post took so long to get up!

I was going to go to the gym this afternoon so I threw together a quick snack for some energy:

Roasted Red Pepper Hummus, Carrots, and Grapes.
140 calories, 3 grams of protein, and 3 grams of fiber.
However, despite the gloomy weather, the temperature was perfect! So, I laced up my shoes and went running! It was great to run again but my ankle is hurting me and I have a weird knot on the outside of my ankle. It’s really tender and my parents want to take me to urgent care (i’ve had it for three days now)
- 3 miles running in 25:20
- Ab Work
- Free Weights

After working out, I finally got to have a slice of sourdough bread!
I’ve never had sourdough bread before and this loaf is crunchy on the outside and chewy on the inside. I think I am in love!

My slice was just 86 calories and 2 grams of protein!

For my workout today, I did a 60 minute cycle class. The class was really challenging, I loved it! Afterwards, I showered at the gym and then went out shopping for a bit. I lost track of time so I had to whip up a smoothie for another ‘mini meal’
I’m a huge fan of green smoothies, they taste just as sweet as a fruit smoothie but pack that extra nutritional punch! Today’s green smoothie came out very green!

Banana, strawberries, cantaloupe, spinach, plain Silk, and milled flax seeds.
This came in at 168 calories, 7 grams of protein, and 7 grams of fiber. I am going to have to have a big dinner tonight since calories have been so weird today! I’m not that hungry… maybe it was all the indulging this weekend?

Wow, today kind of flew by! I just got back from a cycle class and I’m starving (and soaking wet) so I’ll make this quick and recap everything!
For snack today, I made a Sun-Dried Tomato Hummus and served it with crisp veggies.

The hummus is made of sun dried tomatoes canned in oil (not too healthy), 1/4 cup silk yogurt, 1 tbs tahini, garlic, sea salt, and soaked garbanzo beans. I served it with cucumbers, red peppers, and a carrot.
After snack, Kath asked me if I wanted to go on a walk so of course I had to go! The weather is perfect and I got to show her the trail I run at! It was really relaxing and fun
We ended up walking 2.5 miles together.
When I got home from walking, I looked at the clock and realized I could make it to the cycle class. So, I grabbed my gym membership and headed out the door! The class was tough but the teacher was a little too… enthusiastic. Oh well, at least I got in a good sweat!

I just sat down!
Before leaving to work out, I had a tiny snack to give me some energy! I had 1/3 cup Silk Yogurt, 1/2 tbs milled flax seeds, and some fresh cantaloupe.

91 calories, 3 grams of protein, and 2 grams of fiber.
My work out was fantastic!
- 2 mile walk in 32:33
- 45 minute cycle class
- 2 mile walk in 32:02
On the walk home I got to eat my Cashew Cookie Larabar

210 calories, 6 grams of protein, and 3 grams of fiber.
I’m going to shower and make some dinner!

Well, the weather worked out great and only sprinkled on me for a few minutes! I was pretty cold but I warmed up once I got into the gym! Here is what I did for today’s workout:
- Run 2 miles in 18:36
- 10 minutes of ab exercises
- 15 minutes of free weights and machines
- Run 2 miles in 18:53
It feels really great to be done with my work out this early in the day! I might have to go straight after school from now on… it’s invigorating! After running, I had a fantastic snack.

Banana with 1/2 tbs Smucker’s Natural Chunky PB and 1/2 Tbs Cinnamon Raisin Swirl PB.
136 calories, 4 grams of protein, and 2 grams of fiber.
I love PB + Banana for snack because it seriously takes me forever to eat it! I like to savor every single bite.

Despite homework, I decided to really treat myself and enjoy this beautiful weather! I walked 2 miles to the gym, did a 55 minute cycle class, and walked 2 more miles back. The walking total was one hour and 10 minutes! I enjoyed this change up! So, for my exercise, I am going to run to the gym and lift weights/do abs one day and then the next day walk to the gym and cycle! This will help me avoid injury and keep things exciting!

Before walking home, I had a Larabar and more water. I was tired but so excited about my new routine! 180 calories, 4 grams of protein, and 4 grams of fiber.
Oh, I forgot to mention that I walked to and from the gym with my mom! She works at the YMCA so she got some things done while I cycled! We also ate lunch together which was really nice.

Carrots

Cantaloupe with Blueberries

1/4 cup Silk Plain Soy Yogurt with 1/2 tbs of milled flax seeds. As much as I loved the idea of making my own yogurt, this type is just so much thicker.

Veganomicon black bean burger on a Trader Joe’s whole wheat bun with spinach, 1/2 tbs nayonaise, mustard, and ketchup.

This delicious and filling lunch was 388 calories, 22 grams of protein, and 13 grams of fiber!
I just wanted to let everyone know that I am bumping up my calorie intake to help with my new exercise routine and 10k training. Instead of eating a low 1200 calories, I am going to aim for at least 1400-1500 calories a day. My body needs the fuel and I don’t mind supplying it

Today’s run was definitely fun, it rained the entire time! Like I mentioned earlier, I ran with my dad so it was great to catch up with him. He was out of town this week and this little bonding experience was just what we needed. He is newer to running (he plays basketball and cycles) so we just did 3.5 miles in 33:23. I loved running with him, we talked about exercise majority of the time!
After running, I had some grapes and cantaloupe to hold me off while I cooked lunch. No picture though, I was really hungry!
For lunch, I had Green Chili and Tomato Lentils, Tempeh, and Mini Whole Wheat Pitas.

The 100% WW Pitas are so adorable! I bought them at Trader Joe’s!

For today’s Tempeh, I simmered the Tempeh with the lentils so it could absorb the flavors.

Green lentils simmered with Green Chilis, tomato, tomato paste, and spices. I didn’t use too many spices today, I wasn’t in the mood for a super spicy dish.

To eat this dish, I stuffed a tiny bit of lentils and tempeh into the whole wheat pitas until I finished all 6 halves. After that, I just enjoyed the dish. It was really fun to eat! Overall, it was light on vegetables so I’ll have to fit those in later today! I was thinking of making cupcakes today but I’m not sure if I am in the mood… we’ll see!
Including the fruit from earlier, Lunch was 388 calories, 22 grams of protein, and 21 grams of fiber.
